The Skin Health Benefits of Carrots

Carrots are abundant in health-promoting antioxidants and nutrients needed for good health and disease prevention. Loaded with beta-carotene, the precursor to Vit A, one carrot provides 100% of your Vit A requirement. We need Vit A for healthy skin and a strong immune system. Carrots also contain good amounts of potassium, fiber, Vit K and Vit C, which help to lower blood pressure and promote good gut health.

For picky eaters, you can finely chop or shred carrots and add them to soups, spaghetti sauce, or stir frys. They are also delicious tossed in olive oil and roasted in the oven for 20 minutes with a little salt and pepper.

Easy Oven Roasted Carrots

Ingredients:

  • 2 lbs carrots

  • 2 tblsp olive oil

  • Salt and pepper to taste

  1. Prep Carrots and Oven: Preheat oven to 425. Wash, peel (optional,), and cut if they’re large. (Baby Carrots or smaller carrots can stay whole. Large, store bought carrots might need to be cut into smaller chunks).

  2. Season: Toss carrots with olive oil, salt, and pepper

  3. Roast: Place carrots on a pan (cover the pan first with parchment paper or foil for easy cleanup) and roast for 20 minutes until browned and tender. You’ll know they’re done if you pierce them with a fork and they are tender. Larger carrots might take longer in the oven

  4. Serve warm!
